The Art of Retting
Retting is an artisanal fermentation process that has existed for thousands of years. A process whereby the natural enzymes of the flax plant eat the pectins bonding the fibres to the inner stalk, allowing the valuable fibre to be extracted. It is highly variable, requiring constant monitoring and flipping in the field depending on the weather and humidity, and is more of an art than a science. That is why in Europe they have 'flax men' or in French, liniculteurs: specialists who focus on only one crop, similar to fine wine or cheesemakers. Liniculteurs ensure that the harvest is pulled, turned, and baled at exactly the right time, ensuring the finest quality fibre.
North America lost that skill, choosing to pursue the easier, and more extensive process of harvesting flax seed, a commodity crop.
